You've already answered your own question. Start assigning yourself pieces to
work on and set deadlines as to when they need to be learned - and then stick to it
with a daily, unalterable schedule. Include the kinds of musics and technical
concerns you'll have to master. Especially focus on aspects of your playing with
which you struggle.
If you are unable to motivate yourself, your dreams of orchestral playing or
university teaching just are not realistic. To get anywhere as a musician, you must
have a true desire to be great. From your letter, that does not seem to be within
right now.
Lots of people say "I want to be great" but don't have the inner strength or
work ethic to get there. It's time to find out if you do...
