My question:
When Eddie Harris played trumpet or flugelhorn with a soprano sax
mouthpiece on the end, did it become a woodwind instrument?

I would direct your attention to the Royal Kent Keyed Bugle, a family of
chromatic brass instruments that took the world by storm after they were patented
by Halliday in 1810.
It is my understanding that Adolphe Sax based his instrument improvements on
this family of instruments. One experiment was to replace the keyed system
with three valves, thus establishing the family of "Saxhorns" from which the
modern trumpet has been derived. The other experiment was to retain the keyed
system (which he modified) and replace the cup mouthpiece with a reed
mouthpiece, thus establishing the family of instruments called "Saxophones." Since both
the saxophone and the modern trumpet were derived from the same instrument
(keyed bugle) there might be some credence to the opinion that the saxophone is
indeed a musical instrument.

To answer the above question, the flugelhorn with a reed mouthpiece would be
a woodwind...a variation on the above discussed experiments of Sax, and an
answer to those who demand sax appeal in their instruments.
