Jon, you're absolutely right.  You obviously understand the "business" end of the "music business".
Did the same thing with an Elvis show in the early 80's, the show grossed around $3k per night.  Principles in the show would net $300 - $400 per show, the show was two hours long.
We got the door plus 15% of the bar.  Dinner was served prior to the show.  We also paid for advertising.

Shows take more preliminary work.  I believe that it took a month to put it together, charts, program etc.

Which ties into another subject, playing clubs vs. playing shows.  Big difference.  When you're 
working clubs, you are providing "background music".  

Shows are great, the audience sits and actually listens to what you're playing.

If you want to make any kind of money, you have to play the "business" also.
